60 kms per day is realistic. Campsites are every 30 km. Not sure when you intend to leave, so I can't comment on the weather, but if it's within the next 2 months then get some winter longs or at minimum leg warmers and a few thermal tops. Anything that will keep you dry is a bonus. Also look at some pannier covers or even plastic shopping bags to keep your panniers dry. No use having waterproof clothing if everything is wet before you put it on.

Main problem with the wet is mud and chain suck. Especially towards Hobart and from Jeffreys Track (Mt Wellington) south. 4wds tend to mess up some of these tracks. Water on the smoother gravel roads can also cause the gear cables to get clogged.

Caves Track will be pretty much inaccessible if travelling North to South. Either take the Poatina road (about 13 km uphill and steep) or the Quamby Bluff - Briona road from Golden Valley to Great Lake.
